
My name is Patrick Jernigan. I was introduced to the world of kombucha back in 2015. I was having a problem with high blood pressure and my wife, January, had read about the positive benefits of kombucha, and bought me my first bottle.
My family fell in love with this drink! We had replaced our sodas with kombuchas. It made a huge impact on our life. When we built our home, originally we were going to put a tap in our countertop for kombucha, but changed our minds and decided to purchase a smaller refrigerator that we call the “Kombucha Fridge”, just to hold all the kombucha we were buying.
After eight years of buying kombucha, I wanted to surprise my wife and try to make it. I read many articles and watched a lot of videos on how to make it. There was just one problem. I did not have a SCOBY (Symbiotic Culture of Bacteria and Yeast). I told January my plans of wanting to surprise her with trying to make my own kombucha, which takes all of the surprise out of it, but that I did not have a SCOBY and did not know where to go from here. She informs me that her friend used to make kombucha and she immediately gave her a call. Within a few hours, I went from feeling stuck, to being the owner of a SCOBY and starter liquid.
Let the games begin! I started attempting to make my own kombucha. Through trials and errors of trying different recipes, we finally came up with something January and I were happy with. This was all for her, so she had to go through a lot of taste tests to make it right.
January decided that we should make a business. I was not in favor of it, because having a business is not easy and I am not much of a risk taker. So after a few months of saying no, I did what every great husband would do…….. I said OK. We started out with our own family’s favorites, grape and orange. January and our boys suggested that we make funny, different names. Grape turned into Grapeness, like Grape and Greatness combined, and Orange turned into Moremosa, after the beverage Mimosa, combining More with Mimosa. So every name we come up with will have a twist, just because we think it is fun!
Our kombucha is 100% living (alive) and natural, so you will have a small SCOBY in each bottle. We believe that there are health benefits to drinking these little SCOBYs, but it isn’t for everyone, and that is ok! Feel free to strain them out when pouring them into a glass. By the way, January believes pouring it in a glass makes it feel way more elegant.
I enjoy making each small batch of kombucha. It makes me happy! Hence the name Patrick Jernigan’s Happy Kombucha. I hope you can feel the happiness and love with each sip you take.
